The corporate gather up 24 milk's sheep farmers, of Massese's race, that transform in milk in theirs factories.From that milk they produce different kind of pecorino cheese, ravaggiolo and ricotta cheese.
That farmers have never left the traditional manufacturing, their sheeps pasture on the ground all the year.In the summer time the farmers bring the sheeps on the top of the mountains.
In 2001 those farmers have created the Consorzio "Montagne e valli di Pistoia" brand for taking care quality of their products for protect cultural identities tied to food and gastronomic traditions, safeguards foods and cultivation and processing techniques inherited from tradition.
In 2000 Slow Food have recognized the "pecorino cheese with unboiled milk of Pistoiese's Mountain" as one of the most important product to safeguard.
